Hi
Each time my opnsense baremetal instance reboots, forefully or manually through the GUI, all interfaces are unassigned.
So basically I loose access to the opnsense webgui, and can only manually log into the terminal, disable pfctl, log in through the webgui, select each interface on the assignments tab and give it a name, add the options like static ip or so back. Then it works again.
All other things like firewall rules, plugins, users stayed, it's really only the interfaces that get "unassigned"
WAN and LAN are not removed, they stay.
The others are vlans and a bridge

could it be possible that the installation media is still plugged in and the system booting to it?

No definitely not.
All other data is persistent as well, if it would be Live-Mode, I guess much other data would be cleared as well ?

Try to enable "Lock Interface" on the interfaces that get unassigned.
