I can't seem to find an option to restrict access to the firewall GUI and SSH. I can only enable or disable the options. How is this done?

You would use firewall rules to do this, keep in mind the default is to block all incoming connections, except on the LAN interface. If you want to restrict by IP on the LAN interface, then you must disable the Anti-lockout rule under System > Settings > Administration
