Hi,
I was wondering if it would be possible to make UNBOUND DNS work and take over DNS request if my DHCP server is handle my a DHCP server running on an Microsoft Server 2022 box.

I would advise to run DNS from the Windows server. It will register your DHCP clients in DNS and is pretty much a requirement if you set up AD at some point.

For AD to work the recursive DNS servers for the clients
must
be the domain controllers.
