This might not be very relevant to OPNsense, but I would like some advice on moving the SWAP to a new partition/disk. I'm running an OPNsense VM on Proxmox with an SSD, I want to move a SWAP partition to another HDD, is that possible?

Maybe you can add a disk, add a partition to it, format it for swap and add it to fstab of your VM.
The trouble might be passing through a partition instead of a whole disk. I haven't tried. My OPN is on bare metal.
I would try by attaching the disk to the node, seeing with lsblk that is there followed by making the swap partition. Then play with adding to the VM with a manual update of the VM config to give it the partition by uuid or label.
