General Discussion / Reboot after update gets stuck

Hello Everyone,
At home I have OpnSense installed on a Mini Forums NPB6 (i7-13620H 32GB RAM, and 1TB SSD, dual 2.5gbps Intel NIC) https://store.minisforum.de/en/products/minisforum-npb6 the firmware and BIOS are as up to date as possible.
The device is way over speced for my data connection of 500/250 but I never have any jitter with IPS enabled, and a number of other resource intense services. However, I have a cron tasks setup that at 1:00am every day, it looks for an update, and applied the update. At the moment the way that I know that the update was applied, is that the next morning, my phone has disconnected from WiFi, and I cannot access any of the services on my home network (externally). To remedy, I walk over to the network cabinet and long press the power (to turn it off), and then power it back up.
I always have a KVM switch plugged into the HDMI, so the first few times, I switched over to the NPB6 and there was no signal, and nothing on screen. After powering down, and powering back up the screen came back to life. I have looked through the logs to try and identify what is happening and none of the logs I can see indicate what is causing this. Additional tests I have done:
I have only been running the 24.X version on this device, the 23.X versions were all running on a device that is now retired. I have experienced this issue with every minor update so far.
Are there any logs that I can look for to try and troubleshoot this?
Or any settings I can try out to see if this can be resolved?

- SSHd in, and executed `sudo reboot` which reboots correctly, this did not have an update applied prior.
- Disabled the cron task, and manually checked for an update and monitor. Also exhibited the same behaviour of getting stuck somewhere after the reboot command is executed.
