Can haproxy do content switching like a netscaler? Allowing you to host multiple services on the same port via one IP address.

HAProxy is TCP and HTTP reverse proxy. In case of HTTP you can route based on the URL, Hostname etc.
In case of TLS it is possible to route based on SNI.

I do not know if it can decide between different protocols like SSH and FTP on the same port.

You'll likely have better success with sslh http://www.rutschle.net/sslh

It will need an internal host to do the split, or even host the various services.
