I have a DOCSIS 3.1 modem (SB8200 SURFboard) that has two 1gb uplink ports on it for WAN, How do I set that up in OPN? Do I have to create a lagg group first or is there a better way?

What does your modem's documentation say about how to use/configure these two ports?

You have to create a LAGG in OPNsense
and
enable link aggregation on the modem.

It depends on the modem. Some of them will only allow one port active at a time. However, those are usually the ones that have something like a 2.5g and a 1g port, not the ones with multiple 1g ports.
