Hardware Recommendation for new OpenSense Server

I wonder if I could ask for help recommending hardware for my first OpenSense Server?

Goals
I would like to be able to achieve:

• Whole house VPN
• Whole house Ad Blocking
• Separate Router from Access Points for better Wi-Fi coverage and control.
• Maintain 10gbe traffic
• Get rid of Noisy datacenter switches (if possible)
• Rock Solid Solution (minimal reboots)
• Budget is a factor but I am not above scrounging eBay. 

Constraints
I have a vented AV closet in my house but no space for a full rack.  My Switches are awkwardly mounted vertically on the AV rack, and have I mentioned they are NOISY!

Inspiration
My inspiration for this build is a video called "Son of the Forbidden Router" https://youtu.be/OcLcCfReeOQ?t=151 over at Level1Techs.  I decided to steer away from the "forbidden" aspect of his build, but I wonder what everyone thinks of his hardware recommendation:  A Gigabyte MW34-DP0 workstation board with an i5 Alder Lake processor.   He seems to feel strongly that at least Alder Lake is required for anything faster than 1gigabit.   This sent me to eBay to look for some used corporate workstations with an Alder Lake i5 or i7.

Do any of you have thoughts on his assessment?   Is this overkill?   Would one of these Lenovo, HP, dell used corporate boxes present any compatibility challenges with OpenSense?

Also, I already happen to own a leftover Ryzen 7 5800x.

I guess the bottom line question is: 

Is there any reason to avoid consumer grade hardware when building an OpenSense router?  Will I run in to compatibility issues?  Do I need ECC ram?
