Is there anything here that I should be using on a default basis?

Can you rephrase your question? I'm not sure what you are asking.

Sorry if I was not clear...
I am merely asking if there are any tunables that make sense to use by default, where I would believe most are used in specialized cases?

Most on/off defaults are set for specific use cases and should be changed with care.
Buffer size based defaults can be tweaked and a lot of those exist like hushcoden suggested.

I am curious to understand more about the following changes:
hw.igb.rxd="2048"
hw.igb.txd="2048"
net.link.ifqmaxlen="4096"
I am noticing that memory usage went up dramatically when I implemented these. Is this ok? I have Intel i210-AT NICs.
