For dnsmasq, may I edit /etc/hosts for the dhcp entries I want it to serve?
When I did this as root, my entries were lost when something reverted the hosts file back to the original, system-created version. I did this a few times - worried that my 'save file in vi' was fatfingered - concluding that was not what I experienced.
I am very enthusiastic about this product, and I'm reading and learning a lot. Kudos.

Welcome tomtomz,
You can add host and domain overrides under Services: DNS Forwarder at the bottom of the page so they don't get lost on reconfigure.
Cheers,
