The dashboard & WebGUI become unresponsive and unusable after a short amount of time. Seems worse in Chrome than Firefox. This is an upgraded instance, mostly unconfigured, not being used except for testing.

Yup this has been happening to me after they did the UI overhaul.  I can only refresh the page, assuming it doesn't hang, to get everything back.
OPNsense 25.1.9 running on:
Dell Optiplex 3050
Intel I5-7600 @ 3.5Ghz (4 Cores)
Intel I350-T4 Nic
8G DDR4
256G SSD

Can you pinpoint the widget that causes this? You can delete all of them, and add them one by one, and find out which one causes your issues.
Hardware:
DEC740

Surely... I will begin testing those right away. I'll let you know what I find!

I believe it's the traffic graph.  Thats what I see crash out most and first.

It is the firewall graph that hangs the page for me. I had the traffic graph, cpu, memory, temp, interfaces and system information running for a day. After adding in the firewall graph, the page was unresponsive after 10 minutes in Chrome.

I was unable to upgrade from 25.1 as within a few minutes/ within an hour of upgrading (or full install from image) the GUI would bug out / crash often followed by a total unresponsive crash / freeze. I tried multiple installs with the same result and was able to reinstall 25.1 and run again with no issues.

After trying various things unsuccessfully I have done a full 25.7 reinstall and disabled the "Traffic graph" on the Dashboard - my router now been running fine for 20 hours. I still have the CPU graph running on the Dashboard.

Still early to say conclusively, but evidence suggests that in my case the Traffic graph was causing system crashes, no idea why.
