SOHO hardware with support for 5 & 10 Gbit/s fibre.

XGS-PON is becoming available from my service providers and I have started to look for hardware to facilitate migration to these services.

While I can find hardware with combinations of 2.5Gbit/s copper with SPF+, I am yet to find much in the SOHO market with 10Gbit/s copper with SPF+.

Does anyone have any recommendations for hardware that will run OPNsense?

I would have a look at the Mikrotik catalogue. Their products are "keenly priced" and capable.

I did look, but there do not appear to be any with 10Gbit/s copper ports. So the only option would be 4 x SFP+

Copper SFP+ modules run very hot.

I run 25gbps internet on MS-A2 9955hx. In past used 14700, non-k version.

Important consideration is the network card that you will use. E810 or Connect4-x Lx both work great for me.

I get 25gbps routing performance out of OpenSense easily on 8 cores

If not, you could simply get a XGS-PON SFP+ module (again, please check with your ISP, I have seen the weirdest stuff when it comes to XGS-PON) and either an old SSF PC with a SFP+ NIC or something like the DEC740 from OPNsense.

In general, despite some very recently announced and I think still unavailable Intel NICs, 10Gbit copper uses way more power and is way more expensive than fiber or DAC.

My interim solution has been to terminate the copper from both the ONT's onto one of my Unifi switches.
Then trunk the traffic to the OPNsense box via SFP+/DAC.
