Add wildcard host override to existing host

I see that I can add a wildcard override in the Host Overrides, but I'm having trouble getting it to work.

What I want to do is add an override for *.host.domain" but under the host field I can only put * or host.

Additionally, the override requires an IP but  I want to use a host alias so that I don't need to update the override if the host changes IPs.

Any suggestions?
