Difference between Interface > Settings and Tunables?

If I uncheck any of the disable hardware offload options in Interface > Settings the x550-T2 I'm using stops working.
However, if I leave the disable options checked and then change settings under the System tunables everything works as expected.
What's the difference and/or why do I have issues using the settings under interface vs the same settings under system tunables?

The settings you mention are only half of the story here. First, note which options exactly are you trying to set. Then, to check if they are actually in effect, do 'ifconfig -a', observe the interface options and note if there are any discrepancies with the options you have set.
If you see any differences, try to figure out where they come from. I have noticed for example that Sensei/Zenarmor also manipulates the interface options, but there may be more programs doing that.

I'm not seeing any hard evidence here. For good measure:
ifconfig != sysctl
You can set network device specific things in ifconfig which Interface > Settings does in part. This cannot be confused with system tunables that could modify driver-specific things for this or that. I don't think one tool will influence the other on the surface although based on driver some settings it can overlap for reasons beyond the scope of this question. Best to ask the driver author in these cases.
