23.7 Legacy Series / Lost all interfaces updating from 23.7.5 to 23.7.8_1

My OPNsense is running on a bare metal mini PC with a 4-port NIC. Last night I kicked off an update from 23.7.5 to the latest (23.7.8_1) and went to bed thinking all would be fine like has been in the past. I woke up to all of my networks offline. My own fault but not a big deal since this is just me home network.
What I found in the console during boot-up is the message: "default interfaces not found". I setup WAN and CFG interfaces so I could get into the web UI. All my configuration appeared correct except there were no interfaces (except for WAN and CFG that I just added).
I found instructions online for downgrading the opnsense package to 23.7.5, rebooted, restored configuration to get the interfaces back, and rebooted again. Upon booting back up my interfaces were still missing, so whatever caused the issues doesn't seem to be cause by the opnsense package update alone.
After more failed troubleshooting, I reinstalled opensense 23.7 from USB and restored my configuration. This at least got most of my home network back online and functioning, but I'm not able to re-install any of the plugins I had installed since they all want/require the latest opnsense version.
So now I'm in a bit of a quandary. Try updating to 23.7.8_1 again and hope for the best, or wait for the next release and hope the issue is fixed. I'm not complaining - I don't pay for this amazing software. I'm just wondering if anyone has any suggestions of how to resolve my issue.
