Hardware and Performance / Only seeing 1 gig performance on 10 gig setup

Wow do I feel dumb, I somehow managed to accidently configure the virtual NIC to use a 1 gig vSwitch. Problem solved after fixing that.
Let me start off by saying that I just switched to OPNsense from a pfSense that was configured in the exact same way (same vSwitches, CPU, memory, etc.) which leads me to believe that this is an issue with the OPNsense configuration.
OPNsense hardware configuration: Hyper-V, 8 vCPU (Intel(R) Xeon(R) CPU X5675 @ 3.07GHz (4 cores, 8 threads)), 4 GB RAM (auto expands up to 16).
Issue: Internet speed tests and iperf test shows only 1 gig performance, I would expect to see 2.5 gig for the internet which is what I was getting with pfSense.
I followed the following tuning guides with no improvements, and yes I rebooted the OPNsense:
