There a lot of guides here, can someone point me to the appropriate one to route all outbound traffic from specific IP's through openVPN but still allow local traffic to the same IP's?

I can't explain it but after switching the card out with a X520-DA1 I had no further problems..But the X520-DA2 is back in my server working without issue.

I had a pfSense running as a VM in my server and now I'm trying to setup a dedicated OPNsense box with an Asus Z370-A MB and a Intel X520-DA2 NIC but the setup doesn't see the NIC on the onboard one. I have verified the NIC works is good as it was working when I pulled it. How do figure this our?
