How can I use an alias made for a dynamic ipv6 host to specify the name server in the DHCPv6 server settings?
Or is there another good solution for specifying the DNS server for ipv6 when you don't get static ipv6 addresses for it?

Not supported at the moment.
My home network is lacking static IPv6 so I assigned an ULA alias to my DNS server and set DHCPv6/RADVD to hand-out that ULA.
I don't like using ULA but this is the only solution I can think of.
Unless you're on an IPv6 only setup there would be no need really for a NS, not to mention the whole premise of a dynamic NS is a it odd...

There is indeed. Use SLAAC and run RADVD on OPNsense to advertise DG and DNS to dynamic clients.

That's what I'm doing --- not ideal, but it's working ...
