Hi - new to forum and Opnsense and am interested in the possibility of Opnsense as a UTM platform.

I mainly only want to achieve 2 things;

1) URL Filtering / Scanning to prevent bad stuff being accessed by users
2) Email Filtering / Scanning  to prevent bad stuff being accessed by users

Would appreciate general pointers inc RTFM, sections of the manual, friendly advice and success stories :)

OPNsense doesn't do email filtering; you'd need to deploy something like EFA https://efa-project.org/

The squid proxy supports blacklist subscriptions under 'Remote Access Control Lists' and the firewall itself can use the Spamhaus DROP and EDROP lists https://www.spamhaus.org/faq/section/DROP%20FAQ

For everything else there is Suricata
