Hi all
I got a mini PC with 6 ethernet ports and a Netgear router I can use for wireless.
Is recommended set-up to use the Netgear as my wireless ap and switch and only connect to opnsense box with 1 cable to LAN port?

Yes, what else you can do?
You can create an VLAN for you the AP, only for the wireless network.

Would that not mean that all routing and firewall and DHCP config would be controlled by the wireless router and not opnsense?

No, because you have to configure your wireless router as an access point, so NAT, DHCP... is disabled.
