Title: How to show ISP downtime issues with logs from Opnsense

I recently started using opnsense on a Dual LAN Xeon system that has been on for the past 4 days.

In that time we have lost access to the internet a few times, I would like to send reports to the ISP.

What is the easiest or perhaps most comprehensive way of showing the internet went down and the multiple attempts opensense made to reconnect?

Too broad a statement to begin with. "The internet went down".
You need to first identify what/where is the problem, then you can figure out where is the best place to find the evidence to show or even to diagnose. It could be a problem with your configuration.
If you think the problem is WAN side, say dropping the connection to your ISP, then I would start looking at reporting > health > quality > WAN_DHCP .
Admittedly I can't see an easy way to identify WAN-side problems.
P.s. it could be DNS problems, check for that (internal to you first).

System : Gateways : Single, have a look if montoring is active. If yes downtimes get logged there
