Upgraded and after reboot i have internet connection for a little while. And that stops,
I am not able to get it back up.
After another reboot the same.
I noticed the wan interface was down.
In the log I noticed this:

Is this the reason?

Took a quick look. Nothing around this code changed in the last 3 years. I'm assuming this is one of those teardown races which PPPoE is especially prone to (mpd5 removes and recreates devices on a restart). If it's not crashing it's good. If it stalls traffic now that's a bit weird. Is your pppoe0 still there?

Opnsense keeps running.
But I see on the interface overview that wan is red/down after a minute or so.
The default routes boots with an ip mentioned there, but then changes from this ip address to nothing.
Hitting refresh or in interface disable and enable wan does not bring it backup. Only a reboot of the opnsense box, and only for a very short time
In gateways configurations wan pppoe states than: defunct (upstream)

Well, these two are interesting when this happens:
# ifconfig pppoe0
# pgrep mpd5
Can't rule out that a kernel change causes this. You could try downgrading the kerne:
# opnsense-update -zkr 25.7.11
(reboot)

I also got this an hour ago (on 25.7.11-9) and yeah, only a reboot of the firewall would fix the problem. Didn't think much of it at the time as the connection stayed up since so I upgraded to 26.1 right after because why not. A little concerning this is happening to someone else considering I did look around and found threads with this issue dating back to years ago? Nothing very conclusive. And I'm not sure the landscape is the same considering mpd5 is involved this time.

If it means anything, I didn't have this issue on 25.7.11-2. Only upgraded to 25.7.11-9 today in preparation for test driving 26.1. Then again .11 had stalled my installation with hostwatch days ago before the hotfixes came in, which then warranted a reboot, so it wasn't that good of an up-time metric.
Downgraded the kernel opnsense-update -zkr 25.7.11 but it fails after a minute :
Possibility of hostwatch exhausting the memory can be a factor. I'm assuming it's enabled and it's not growing too big in memory?
The bigger question is are we talking PPPoE in both cases? from _2 to _9 there's no reboot, very few changes. Wondering about the timing of these reports and what they would point to. Not seeing any reasonable explanation yet.

I have hostwatch disabled. Before updating and that was my first disable after updating.
I upgraded with the upgrade path to _9 (no reboot) and than directly thereafter to 26.1 with reboot and the problems stared.
Been on PPPoe for years with opnsense. No change there
Allow me to restate the timeline on my part: I didn't have any issue (like this) with PPPoE either until 25.7.11-9. The hostwatch hiccups forced a reboot and log wipe so IMHO there's no real evidence that .11 (and the subsequent hotfixes) is at fault. I also had hostwatch disabled first thing before the hotfixes even came out. I upgraded straight to 26.1 after the incident. That's it.
And yes, I went through exactly what OP had, down to the logging output. In my case, I'd even waited for over 50 PPPoE reconnect attempts and nothing. Reloading services from the CLI didn't help either. Only a reboot could fix the problem, though my WAN has stayed up since 26.1, unlike OP's.
I'm only posting here because it does look like there's a real possibility the issue might resurface for me, so I'd like to follow up.
When from CLI - reload all services - it brings the internet backup as with a reboot, but than again those errors
