Having run a dmidecode dump, I've noticed that my RAM is running at half its speed. (please see below)
Any ideas why and how to set it to the right speed (2666)?

You should look at the header "Configured Memory Speed: " which reports the... well configured speed and then double that. The header "Speed: displays the highest speed supported by the DIMM probably read from JEDEC SDP. dmidecode just reports what the DIMM advertises.
In this case the DEC740 runs at 4800MT/s which is totally fine and valid.
The first device runs at 2666MT/s slower but not 1333MT/s so no worries mate!
