how many lan can i install in my opnsense ?

As much as the hardware can handle? FreeBSD has no real limit for network devices. But, tbh, I have no idea if there are any glitches in the GUI and code if you have more than eg. 255 network devices.. ^^

That's absolutely not a problem.

Make sure you skim through the docs, especially for setting up Multi-WAN:
