it seems to not install onto esxi disk but just go though the live cd configuration. How do I install onto Esxi

I would be careful, as it would be easy to configure ESXi management on the WAN interface (wrong side).

A dedicated machine would be a better way to go. Specifically, you would not be open to any host (ESXi) vulnerabilities, and the physical computer would require less resources (as there would not be any hypervisor). I know ESXi does not consume many resources, but it adds another level of complexity.
