Where can I find a printable version of the OPNsense 18.7.x documentation?

There is no official one, but it can be built from the sources using make latex and then run pdflatex on the main file after changing the format to a4paper (otherwise you would get letter).

Please note that some images are too big and the result has some unicode issues for an unknown reason.
